Marni’s Best Steelhead (or Salmon) Recipe
This is my all-time favorite salmon recipe. I love the taste and goodness of salmon, and it’s easy! I recently discovered that I like Steelhead (Rainbow Trout) even better. It’s the same family of fish. Visit Wikipedia for the precise the definition if you want to know more.
- Steelhead or Salmon filets
- Olive Oil
- Seasoning to taste: Salt, Pepper, Oregano, Rosemary
- Garlic / Herb Seasoning if desired
Line a pan with foil (easier clean up) and drizzle olive oil in the bottom. Sprinkle seasoning evenly in the pan on top of the olive oil and set aside.
Rinse the fish (skin still on) under cold running water and pat dry with a paper towel,
Now place it meat side down on top of the olive oil and seasoning and rub around to cover well. Then flip the filets over and add a few lemon slices on top.
Bake in a preheated 350 degree oven for 20-25 minutes.
I usually serve it with a Greek salad and fresh bread. But it goes well with rice or a baked potato as well. Always add a lemon wedge to the plate or on the table so guests can add a squeeze if desired.
