Adding a little cornmeal to the flour mix makes these drop biscuits special. The recipe is easy to whip up in the morning. I love fresh baked goodness like these simple biscuits served with butter and jam, and coffee (or tea!) of course. Take out the extra work of rolling and shaping but just dropping the dough onto a cookie sheet. Less clean up. Easy peasy.
Makes 6 large biscuits

- 1 1/2 c. Flour
- 1/2 c. Cornmeal
- 1 Tbls baking powder
- 1/4 tsp salt
- Cream of Tartar
- 1/2 c. Shortening (use can also use margarine or butter)
- 2/3 c. Milk
In a mixing bowl, stir together flour, baking powder, sugar, cream of tartar, and salt. Cut in shortening, margarine, or butter until mixture resembles coarse crumbs.
Make a well in the center, add milk all at once. Stir just until dough clings together.
Drop by about 1/2 cup size onto a greased baking sheet – or evenly drop until you have 6 biscuits on the sheet.
Bake in a 450 degree oven for 10-12 minutes or until golden. Serve warm with butter and jam. Makes 6.
